Soup of chicory with smoked salmon

Directions

Clean the onion and cut into slices.
Clean the leek and slice.
Clean the chicory and remove hard core. Cut a half of a chicory into fine strips. (for the finishing off the soup) slice the rest into thicker strips.
Peel the potato and cut into small blocks.
Melt some butter and stifle the onion together with the leek and the thick strips off chicory.
Add the stock and bring to a boil. Add the potatoes and let simmer for about a half an hour.
Mix the soup and season with some salt and pepper.
Melt some butter and stifle the fine strips off chicory until they are well cooked.
Cut the smoked salmon in fine strips.
Serve the soup and finish it off with the stifled chicory, the smoked salmon and a bit off cream.

  • 1 leek (only white part)
  • 3 chicory stumps
  • 1 potato
  • 1 L of chicken stock
  • 2 slices of smoked salmon
  • Butter
  • Cream
  • Pepper and salt
