Sieve the flour in a mixingbowl.
Crumble the butter and the margarine with a tableknife throug the flour. It must be crumbly.
Add the sugar, the egg, the spices and the bicarbonate and knead to a firm dough.
Leave to rest for a bout 1 night.
Roll out the dough to a thickness of 3-4 mm en stick out some small forms. You can also make figures with a special ‘speculaas plank’, see the pictures below.
Bake the cookies in an oven for about 10 min at 180°C.
Afterwards, let them cool down. The cookies wil become harder while they are cooling down.


  • 375 gr flour
  • 250 gr brown sugar
  • 125 gr butter
  • 65 gr margarine
  • 1 egg
  • 1 teaspoon bicarbonate
  • 5 gr speculaaskruiden

Spiced biscuits are made with “speculaaskruiden”, wich is a blend of different spices like: cinnamon, clove, ginger, coriander and anise powder.
