Directions

Vanilla-ice:

  • Boil the milk with the vanilla pad
  • Beat the egg-white and the sugar until you become a ‘ruban’
  • Adjust the hot milk to the ruban and put it on a small fire
  • Beat the cream and move it through the mix
  • Put it in the ice-machine
  • When the ice is hard enough take it out and put it in a cakeform that need to filled. Place it in the freezer.

Spiced biscuit ice:

  • Cook the milk
  • Adjust the hot milk to the ruban and put it on a small fire
  • Let it cool down
  • Beat the cream (fluid)
  • Adjust the cream to the mix and put it in the icemachine
  • Crumble the cookies
  • When the cream is turned, adjust the cookies and the egg-white
  • Let it turn on until you have the preferred texture
  • Fill the cake up with the spiced biscuit until it’s totally filled
  • Cover up with the biscuit and place it in the freezer (1 night)

To finish:

  • Deform the cake and place it with the biscuit from top to bottom on the plate
  • Place it in the freezer again
  • Beat the egg-white, join the sugar en beat again until you have a permanent meringue
  • Garnish the cage with the meringue.
  • The cake has to be totally covered with the meringue
  • Place it again in the freezer

  • 5 egg yolks
  • 175 g sugar
  • 1 vanilla pad
  • 3dl cream
  • 3dl milk
  • 2 egg-whites

Spiced biscuit ice

  • 5 egg yolks
  • 175 g sugar
  • 3dl milk
  • 3dl cream
  • 150g spiced biscuit
  • 2 egg-whites

Biscuits

  • 4 egg-whites
  • 200g sugar
